Dubai is hot, spread out and built around cars, so a good day here is mostly about timing. Old Dubai is best first thing, before the heat builds. The middle of the day goes indoors. Burj Khalifa goes right before sunset, and the Fountain goes after dark.
Times assume a weekday in mid-October. It's still hot then (the Dubai Frame's own site was showing 35°C for the afternoon when I checked), so plan on taxis between areas rather than walking. Hours change around Ramadan and public holidays, so check before you go.
The plan at a glance
Al Fahidi early, then the abra across the Creek to the Spice and Gold Souks in Deira. Taxi to the Dubai Frame, then to Dubai Mall for lunch and the aquarium. A short trip out to the beach for the Burj Al Arab, back to Downtown for At the Top before sunset, the Fountain after dark, and dinner nearby.
Stop by stop
8:30 AM: Al Fahidi Historical Neighbourhood
This is the old Bastakiya quarter, a few lanes of sand-colored houses with wind towers on the Bur Dubai side of the Creek. Dubai Culture lists it as open 7:00 AM to 8:00 PM and free. The Coffee Museum inside is also free, open Sunday to Thursday, 9:00 AM to 5:00 PM.
Get here early. The lanes are narrow and shaded, and in the morning it's quiet enough to hear yourself walk.

10:00 AM: Abra across Dubai Creek
Walk a few minutes to the Bur Dubai Abra Station. The traditional wooden abra across to Deira Old Souq is 1 dirham per person, cash only, and the crossing takes just a few minutes. It's the cheapest good thing you'll do all day.

10:15 AM: Spice Souk and Gold Souk
The Spice Souk is right where the abra drops you off, and the Gold Souk is a short walk further in. Both are free to walk. Visit Dubai says most Gold Souk shops open from 10:00 AM to 10:00 PM, though each shop sets its own hours.
Haggling is normal in the Spice Souk. Shopkeepers will call you over constantly, and a polite no thanks works fine.

12:00 PM: Dubai Frame
Grab a taxi to Zabeel Park, Gate 4. The Dubai Frame is open 8:00 AM to 9:00 PM every day. Adult tickets were AED 50 on the official site, and AED 20 for kids 3 to 12. From the top you can see old Dubai on one side and the Downtown towers on the other, which is the whole idea, and the glass floor bridge is a good test of your nerves.
Get tickets: Dubai Frame (official site)

1:30 PM: Lunch and the aquarium at Dubai Mall
Taxi to Dubai Mall and stay inside through the hottest part of the day. Eat at the mall, then go and look at the giant aquarium wall on the ground floor. You can see the whole tank for free from the mall side. You only need a ticket for the tunnel and the zoo.
If you're there at 1:00 or 1:30 PM (2:00 or 2:30 PM on Fridays), step outside for the short daytime Fountain show.

3:00 PM: Burj Al Arab from the beach
The Burj Al Arab is a hotel, so you can't just wander in, but the public beach next to it at Umm Suqeim is free and gets you the classic view. It's about 20 to 25 minutes from Downtown by taxi. Stay an hour, then head back.

5:00 PM: At the Top, Burj Khalifa
Sunset in mid-October is around 5:50 PM, so a 5:00 PM slot gets you up there for daylight, golden hour and the lights coming on. The entrance is inside Dubai Mall. On the official site, Silver (levels 124 and 125, with an outdoor terrace) started at AED 189, and Gold with level 148 was AED 399. Silver runs 10:00 AM to 9:00 PM with last entry at 8:15 PM.
Prices can change with the date and slot, so book your exact time on the official site. Honestly, Silver is plenty for a first visit.

6:30 PM: Dubai Fountain
Come down and walk out to the lake. Evening shows run every 30 minutes from 6:00 PM to 11:00 PM, and watching from the promenade is free. If you want to get closer, the Boardwalk on the lake was AED 25 on the At the Top site. Stay for two shows if you can. They're only 30 minutes apart.

7:30 PM: Dinner in Downtown
You're already there. Souk Al Bahar, across the little bridge from Dubai Mall, has terraces facing the fountain, so you can catch one more show over dinner.
What to skip
- A desert safari squeezed into the same day. It eats the whole afternoon and evening. Give it its own day.
- Walking between areas. Dubai isn't built for it, and in October it's still too hot. Taxis are easy to find everywhere on this route.
- Gold or lounge tickets on a first visit. Silver has the outdoor terrace and the same city below you.
- Midday outdoor plans. That's what the mall is for.
Mistakes people make in Dubai (number 2 is the one that costs you the view)
- Doing Old Dubai in the afternoon. It's much hotter and less pleasant. Go first thing.
- Booking Burj Khalifa after sunset. You get city lights but miss the daylight view. Book about 45 minutes before sunset and you get both.
- Not carrying cash. The abra is 1 dirham, cash only.
- Planning the souks for a Friday morning. Fridays are slower in the old souks, and plenty of shops don't open until later in the day.
- Underdressing for the old town. Shoulders and knees covered is the safe call in Al Fahidi and the souks.
- Saving the Coffee Museum for the weekend. It's open Sunday to Thursday only.
Quick questions about one day in Dubai
Is one day in Dubai enough?
It's enough for Old Dubai, Burj Khalifa and the Fountain if you start early and use taxis for the long jumps. It isn't enough for a desert safari as well, since that takes most of an afternoon and evening on its own.
How much is Burj Khalifa At the Top?
When we checked the official At the Top site, the Silver ticket for levels 124 and 125 started at AED 189, and Gold with level 148 was AED 399. Children under 3 go free. Prices can change by date and time slot, so check before you go.
What time are the Dubai Fountain shows?
Evening shows run every 30 minutes from 6:00 PM to 11:00 PM. Afternoon shows are at 1:00 PM and 1:30 PM Saturday to Thursday, and 2:00 PM and 2:30 PM on Fridays. Watching from the promenade is free.
How much is the abra across Dubai Creek?
The traditional abra between Bur Dubai and Deira Old Souq is 1 dirham per person, paid in cash, and RTA lists it running from 6:00 AM to midnight.
What's free in Dubai for one day?
Al Fahidi Historical Neighbourhood, the Coffee Museum there (open Sunday to Thursday), the souks, the Dubai Mall aquarium wall, the public beach by the Burj Al Arab and the Dubai Fountain shows.
